Skinny Dippers

One can of garbanzo beans, two tbls. of olive oil, one tbls. of tahini, four cloves of garlic, two lemons, fresh ground sea salt and peppercorns... Throw it all in the food processor or blender, you can even use a hand blender! You can drizzle a little bit more olive oil or squeeze more lemon juice if it's not smooth enough, then puree until creamy... Perfect consistency...
I like to garnish with a little bit of olive oil and lemon zest, pine nuts would look great too... This one I garnished with olive oil, then sprinkled with cayenne for a little kick! This is for the tzatziki. Peel and grate four Persian cucumbers (I use Persian's cause they have less seeds). Put in a strainer and sprinkle with sea salt and let it sit for 30 minutes. This helps get rid of the excess moisture. I periodically squeeze out the moisture, or you can put the cucumbers in a cheese cloth and squeeze it all out at the end of the 30 minutes...
Fresh mint and dill add freshness to this dip... I finely chop the mint and dill... And add the herbs and the cucumbers to some Greek yogurt (Which is thicker then your regular yogurt). For two cups of yogurt you need two tbls. each of mint and dill, and two crushed garlic cloves. Taste and season according to your preference.
