Yo quiero taco salad

Slice romaine hearts all the way down their length (Chop the end off after so the leaves stay in place while you are slicing). Wash and dry the leaves well, then chill in the fridge... Chop a Persian cucumber in half, then slice lengthwise. I like the crunch of the peel (Persian cucumbers have thinner peels that other cucumbers) and the peel carries a lot of the nutrients....
Slice lengthwise again, in the opposite direction to make batons. Cut into a small dice... The burst of flavor, and vibrant color of baby tomatoes make this a perfect addition to this salad... Slice avocado into a large dice by cutting lengthwise, then again in the opposite direction. Scoop out the creamy flesh with a large spoon...

This happy little helper gets excited about eating Nutritious+Delicious and is engaged in the food prep, and educated about healthy food choices... Lightly steam the corn in a covered pot and in shallow water, for three to four minutes...
Slice the very end of the corn cob off, grab hold of the top of the corn, and slice off the sweet kernels. Lightly break them up in your hand, separating them... Find your favorite taco seasoning, or make your own! I like this one cause it is Gluten free and found at one of my favorite stores, Trader Joe's. Cook 1 lb of ground turkey or ground chicken. It is leaner then ground beef, and has far less fat. Add your taco seasoning and cook till it is no longer pink. Add 1/2 a cup of water towards the end to create a light sauce...
Start creating your salad by using half baby arugula, half romaine lettuce, chilled is best... Slice your baby tomatoes down the middle, then across. Add the tomatoes and cucumbers to the salad... Add the sweet corn, diced avocado, chopped cilantro, and grated, mild shredded cheese. Allow the ground meat to cool, then add that as well.The salad dressing is the juice and zest of one lime,four tbls. of olive oil, two tbls. of balsamic. I like thinly sliced red onion or scallions, and some blue corn chips crunched on top. My Nutritious+Delicious gift to you, enjoy!
